  • 1 medium onion, chopped
  • 2 medium carrots, chopped
  • 4 garlic cloves, minced
  • 2 cups chicken or vegetable broth
  • 1/4 cup butter
  • 1/4 cup flour
  • 1 tsp salt
  • 1 tsp dried thyme
  • 2 cups whole milk
  • 1/2 tsp ground black pepper
  • 2 oz sunflower microgreens, finely minced (we like to use a mini-food processor or hand chopper)
  • 2 oz broccoli microgreens, finely minced
  • 1 cup shredded cheddar cheese, plus more for garnish

1. Sauté Vegetables: In a medium saucepan, melt the butter over medium heat. Add the chopped onions and cook until soft. Stir in the carrots and garlic, and sauté for another 2 minutes. Sprinkle in the flour, stirring constantly, and cook for an additional 2 minutes.

2. Add Broth: Gradually add the broth, stirring continuously until the mixture thickens to a gravy-like consistency. Season with salt, dried thyme, and black pepper.

3. Simmer: Reduce the heat and let the soup simmer for 10 to 20 minutes, allowing the carrots to soften. Use an immersion blender or potato masher to break down the carrots and onions into smaller pieces, creating a smoother texture.
4. Combine with Milk and Microgreens: Lower the heat to medium-low. Stir in the milk and finely minced microgreens, and let the soup simmer for another 5 minutes. The point here is just to warm it through -- not to cook the microgreens.

5. Add Cheese: Gradually add the shredded cheddar cheese, stirring until it is fully melted and the soup is well-combined.

6. Serve: Ladle the soup into bowls and garnish with extra shredded cheese, microgreens, and chopped spring onions for added flavor and presentation.
