Welcome to our recipe blog! Today, we're excited to share a simple and delicious recipe for Homemade Farmer Cheese infused with fresh chives and our nutrient-packed Rambo radish microgreens. This creamy, tangy cheese is perfect with crackers, on toast, crumbling over salads, or enjoying on its own. Our son says this is his favorite cheese. Let's get started!
Ingredients:
- 1/2 gallon whole milk (raw or pasteurized)
- 1/4 cup white vinegar
- 3 Tablespoons finely chopped chives or green onion tops
- 1 oz Rambo radish microgreens, finely chopped
- 1 tsp salt
Directions:
1. Heat the Milk:
In a large, heavy-bottomed pot, bring the milk to a slow boil, stirring occasionally. Keep the heat at medium or medium-low to avoid scalding the milk. Meanwhile, get your chives or green onions and Rambo radish ready.
2. Add Vinegar:
When small, foamy bubbles begin to form in the milk (around 190°F), turn off the heat. Slowly add the vinegar, stirring gently. Curds will begin to form immediately. Let the mixture sit for 15 minutes without stirring.
3. Incorporate Herbs and Microgreens:
After 15 minutes, add the finely chopped chives and Rambo radish microgreens to the curds.
4. Strain the Curds:
Place a colander over a large bowl or pot. Drape a dampened cheesecloth or thin, clean dish towel over the colander. Pour the curds into the cheesecloth, allowing the whey to drain into the bowl below. The curds will be caught in the cheesecloth.
5. Remove Moisture:
Lift the cheesecloth and wrap it around the curds, twisting and squeezing to remove as much moisture as possible.
6. Shape the Cheese:
Add the salt to the curds and stir to combine. I used my fingers for this. Wrap the cheese tightly in the cheesecloth and place it on a plate. Set another plate on top and press the curds into a flat disc about 1 to 2 inches tall. Cover and refrigerate for at least 1 hour before removing the cheesecloth.
Your Farmer’s Cheese is now ready to enjoy! We love the flavors of the fresh chives, and the Rambo Radish gives it a wonderful color.
