What Are Microgreens? A Fresh Look at These Tiny Powerhouses

If you've been seeing tiny leafy greens popping up in salads, smoothies, sandwiches, or on top of fancy entrees, you're not alone—microgreens have become one of the most exciting trends in fresh eating. But what exactly are microgreens, and why is everyone suddenly talking about them?

Let’s take a fresh look at what makes these little greens such a big deal.

So, What Are Microgreens?

Microgreens are young, edible seedlings of vegetables and herbs. They’re harvested just after the first leaves (called cotyledons) have developed—typically within 7–21 days of germination. That makes them older than sprouts, but younger than baby greens.

Think of them as the toddler stage of a plant’s life—vibrant, tender, and full of potential.

How Are They Grown?

At EdenGreen, our microgreens are grown in soil (not hydroponically) using non-GMO seeds. They’re carefully nurtured with clean water and plenty of light until they reach peak freshness.

We harvest them by hand and deliver them within 24 hours of harvest—so what ends up on your plate is as fresh and flavorful as possible.

Common Microgreen Varieties

You might be surprised by just how many kinds of microgreens there are! Some of our most popular at EdenGreen include:

  • 🌿 Cilantro – Bright, citrusy, and bold
  • 🌱 Broccoli – Mild and crunchy, packed with nutrients
  • 🌻 Sunflower – Nutty, sweet, and juicy
  • 🔥 Rambo Radish – Spicy, peppery, and vibrant purple
  • 🍬 Beets – Sweet and earthy, with stunning red stems
  • 🍃 Pea Shoots – Crisp and sweet, with a lovely curl

What’s the Difference Between Microgreens, Sprouts, and Baby Greens?

Here’s a quick breakdown:

Sprouts Microgreens Baby Greens
Harvest Age 3–5 days 7–21 days 3–4 weeks
Grown In Water (no soil) Soil or soil-substitute Soil
Eaten Parts Entire plant Stem + leaves Mostly leaves
Safety Risk Higher (moist env) Lower (grown in air) Lower

Microgreens are safer than sprouts and deliver more flavor and nutrition per bite than baby greens.

Why Are People Buying Microgreens?

Some people buy them for nutrition (we’ll get to that in next week’s blog 👀), some for flavor, and some for the sheer joy of supporting local agriculture.

For chefs, home cooks, and health-conscious families, microgreens are an easy way to elevate a meal with color, crunch, and incredible taste.
