What’s the Best Way to Store Microgreens?

Why Proper Storage Matters
Microgreens are delicate, living plants, harvested at their peak to deliver up to 40 times the nutrients of mature greens. Without proper care, they can wilt, lose flavor, or spoil quickly. By storing them correctly, you can enjoy our black oil sunflower, speckled pea, Rambo radish, Waltham broccoli, Zesty Spring Blend, Detroit Red beets, or cilantro for up to 14 days. Let’s break down the steps to keep your microgreens fresh and ready for your next salad, taco, or smoothie.
Step 1: Keep Them Cool
Temperature is critical for microgreens. On delivery day, ideally you should set a cooler a cold pack outside for us to place your microgreens. This is important in both summer and winter, as it keeps your greens from getting too hot or freezing! As soon as your EdenGreen delivery arrives, place your microgreens in the refrigerator, ideally at 35-40°F (2-4°C). The crisper drawer is perfect, as it maintains consistent temperature and humidity. Avoid storing them near the fridge door, where temperature fluctuations can cause wilting.
Pro Tip: If you’re not using your microgreens right away, don’t open the container until you’re ready. This helps maintain their microclimate and prevents moisture loss.
Step 2: Control Moisture
Moisture is a double-edged sword for microgreens—too much leads to sliminess, while too little causes drying out. At EdenGreen, we pack our microgreens in reusable, breathable containers to balance moisture. To store them at home:
- Keep them in the original container or transfer to an airtight container lined with a dry paper towel to absorb excess moisture. We find that glass storage containers with a snap-top lid are perfect for this.
- Don’t rinse until ready to use. Washing microgreens before storage adds moisture that can speed up spoilage. Our microgreens come pretty clean and don’t typically require washing. You can of course, rinse them before eating them if you wish. When you’re ready to eat, rinse gently under cool water and pat dry with a clean towel.
- Check periodically. If you notice condensation inside the container, swap out the paper towel to keep things dry.

Step 3: Handle with Care
Microgreens are fragile, so handle them gently to avoid bruising or crushing. If you’re only using a portion, take what you need and reseal the rest immediately to maintain freshness.
